If you've previously had an aversion to Brussel sprouts, this simple recipe will convert even the worst of veggie skeptics. These miniature looking cabbages are delightful roasted with a generous sprinkling of salt.

Ingredients
500g (1lb) Brussel sprouts
2 tablespoons extra-virgin Olive Oil
Salt and pepper, to taste

Method
1. Preheat the oven to 200C (400F).
2. Place Brussel sprouts into a rimmed baking sheet, add olive oil and a sprinkling of salt and pepper and toss to coat.
3. Roast the Brussel sprouts for 30 minutes (turning every 10 minutes), until golden brown on the outside, and tender on the inside.
4. Serve immediately with extra salt and pepper to taste.

Balsamic & Feta Brussel Sprouts
Drizzle with 2 tablespoons of balsamic vinegar and toss with a handful of crumbled feta.
